AndFoods, a New Zealand-based startup, is making waves in the plant-based dairy industry with its innovative approach. Led by Arup Nag, a recognised expert in sustainable food production, AndFoods is using a legume that has been a staple in human diets for centuries and is naturally free of known allergens.
This unique legume, which no one else has explored, gives AndFoods a significant advantage. The startup has developed a patented, proprietary process to produce plant-based whipped cream, milk, and other products that resemble dairy in appearance and taste, and surpass existing alternatives in terms of nutrition and functionality.
The fermentation process used by AndFoods is GRAS-Generally Recognized As Safe. This process improves the taste of the product through a unique fermentation process using specific bacterial cultures that neutralize off-flavors and add dairy-like flavor notes.
The final product from AndFoods does not contain any allergens, making it suitable for a wide range of consumers. AndFoods' whipped cream achieves a 140% overrun and excellent foam stability, rivaling traditional dairy products.
AndFoods' focus is on B2B applications, offering their whipping cream and powders to companies in food service and manufacturing, rather than building a consumer brand. The allergen-free, gut-friendly base of AndFoods' products is designed for these commercial applications, with commercialization already underway in Asia.
In addition to whipped cream and milk, AndFoods is experimenting with other formats, like ice creams, barista milks, and even solids. The nutrient-rich byproduct from their process also works well in baked goods and cereals. In fact, AndFoods is collaborating with Royal Canin for pet food applications.
AndFoods is also working with several companies, including Starbucks, Mars Wrigley, and Royal Canin, for applications in food service, manufacturing, frozen desserts, and even pet food. The startup's special bacteria for fermenting legume plant products are proprietary lactic acid bacteria strains that break down anti-nutritional factors and remove off-flavors while producing enzymes that generate the characteristic cheesy taste.
With its innovative approach, AndFoods is set to disrupt the plant-based dairy industry, offering products that are not only delicious and nutritious but also allergen-friendly and sustainable.
