Italian culinary maestro, Frank Spartico, is breathing life into Perth with his homely dining experience. "I've got a passion for food and a soft spot for this town," Spartico shared, boasting that his establishment has been a staple in Ottawa since 1998.
Spartico is set to open Franks Bakery and Deli on Gore Street, Perth, alongside an Ottawa location and production site. Looking to kick things off by mid to late June, the entrepreneur and Sarah Dillon, an employee, are working tirelessly to ready the Perth space.
"This isn't my first rodeo when it comes to opening stores," Spartico remarked, as he's faced challenges in managing his Ottawa business and moving into an older building. "I make it a point to visit two days a week to glance over the renovations," he said, mentioning they're installing new floors. Equipment is expected next week, allowing them to begin assembling the store.
Franks Bakery and Deli aims to be more than just a brick-and-mortar restaurant. Dillon enthused about the Ottawa location, stating, "When you step inside, it's like you're family. The atmosphere and the energy that Frank creates for his team makes it a one-of-a-kind Franks."
Spartico wants customers to feel at home through his food. "We simply strive to make people happy and well-fed," he said. The Perth outpost will offer a variety of menu options from its Ottawa counterpart, while also introducing new local favorites. These will include expanded hot meal choices, frozen, made-from-scratch take-home meals, and daily specials, along with enhancing the gluten-free menu once the perfect gluten-free pie dough recipe is perfected.
Managed by Spartico, the franchise in Perth and Ottawa may lead to long days, but the entrepreneur is eager to embrace the challenge. He looked forward to engaging with the Perth community and giving back whenever possible. The warm reception during the Maple Fest in April cemented their excitement for joining the Perth dining scene.
"The community has been nothing but welcoming and supportive," Dillon noted. "They're thrilled to have us, and we're just as thrilled to join them."
